I was talking with a friend a few weeks ago about how hard it was to find chocolate without a bunch of sugar or other unwanted ingredients. We just want to eat good chocolate without any of the guilt! And we got to thinking… wouldn’t it be amazing if our chocolate actually had health benefits? What if we could make chocolate that helped ease our anxiety and calm our stress? We could actually feel good about eating chocolate!

So that’s exactly what we set out to do. We’re calling it “Chill” Chocolate because 1) it’s naturally high in stress-busting magnesium to help you actually chill out and 2) you’ll need to keep it in the fridge since it’s made with coconut butter which can melt near room temperature.

For an even greater “chill” factor, I swapped out some of the raw cacao powder for Apothekary’s Chill the F* Out which contains two powerful adaptogens: reishi mushroom and ashwagandha.

Feel free to add your own twist or toppings! Now relax and enjoy your chocolate - guilt-free!

Makes: 9 pieces

Ingredients

  • 1 cup cacao butter (wafers or chopped into small pieces)

  • 1/2 cup raw cacao powder

  • 1/4 cup coconut butter

  • 1/4 cup pure maple syrup or sweetener of your choice (I actually like using this low-sugar sweetener instead. You could also use honey if you’re not vegan or try using a few drops of liquid stevia.)

  • 1 tsp vanilla extract

  • 2 pinches sea salt

Optional Toppings

  • Sea salt

  • Cacao nibs

  • Crushed peanuts

  • Shredded coconut

Instructions

  1. Melt cacao butter in the microwave or double boiler (double boiler is recommended if you have one).

  2. Once fully melted, whisk in remaining ingredients.

  3. Spoon mixture into silicone baking cups or molds.

  4. Place in refrigerator and allow to set. Note: if you’re adding toppings, remove from fridge after 5-10 minutes, add your toppings, then return to refrigerator to allow to set completely.
