(Healthy) Edible Chocolate Chip Cookie Dough
If you know me, you know I have quite the sweet tooth. I loveeee my desserts. Luckily, I’ve found ways to “upgrade” my desserts so I can enjoy them on the regular without totally derailing my healthy eating efforts.
One of my favorite upgrades has been this edible cookie dough recipe. It reminds me of when I was a kid and had to sell tubs of cookie dough for school fundraisers. And let’s be honest, most of the time we’d just eat the cookie dough raw right out of the tub before it ever had the chance of becoming a cookie.
The good news is this cookie dough is totally risk-free (no chance of salmonella here) and guilt-free (low-sugar, gluten-free, dairy-free and high-fiber??? YES PLEASE!). Wanna know the secret ingredient?
It’s chickpeas!
Yep, this guilt-free cookie dough is made from chickpeas - but you’d never know it! And you can add as many or as few chocolate chips as you’d like to make it more of a healthy snack or indulgent dessert, depending on your mood.

Makes: 4 servings
Ingredients
2 cups canned (or cooked) chickpeas
½ cup sunflower seed butter*
¼ cup maple syrup (I also like Madhava’s Agave 5 for a lower-sugar version)
1 tsp vanilla extract
½ cup dark or semi-sweet chocolate chips (check ingredients if you’re vegan)
Instructions
Place chickpeas, sunflower seed butter, maple syrup (or sweetener of your choice), and vanilla extract in a food processor or blender. Process until smooth.
Transfer cookie dough to a bowl or container and mix in the chocolate chips. Enjoy right out of the container or roll into balls for a portion-controlled treat!
*If you don’t have sunflower seed butter, you can try this recipe with cashew or peanut butter!
