Low-Sugar Superfood Granola
I love granola, but the store-bought kinds are often loaded with sugar and can contain inflammatory oils like canola oil. Try this super easy homemade version that’s low-sugar and high in antioxidants, fiber, and healthy fats!
Makes: 8 cups
Ingredients
4 cups gluten-free oats
1 cup chopped walnuts
1/2 cup pumpkin seeds
1/2 tsp cinnamon
1 tsp finely ground sea salt
1/2 cup melted coconut oil
1/2 cup organic honey
1 tsp vanilla extract
1/3 cup goji berries
1/3 cup cacao nibs
Instructions
Preheat oven to 350F and line a baking sheet with parchment paper.
In a large mixing bowl, combine the oats, walnuts, pumpkin seeds, salt, and cinnamon. Pour in the oil, honey, and vanilla. Mix well until all of the oat mixture is lightly coated.
Pour the granola onto your lined baking sheet and use a spoon to spread the granola into an even layer.
Bake until golden brown, about 20-22 minutes, stirring halfway.
Let the granola cool completely on the baking sheet before breaking it into pieces. Once cool, stir in the goji berries and cacao nibs and store in an airtight container for 1-2 weeks.
