Perfect Pumpkin Parfait

Halloween is just around the corner and in most parts of the country fall is in full swing…. PSL’s are being sipped, pumpkins are being carved, crisp, colorful leaves are being raked. It’s the perfect time to break out those fall-inspired dessert recipes you’ve been wanting to try. You should definitely add my homemade pumpkin parfait recipe to that list, so stay tuned!

In San Diego, though, it’s almost 90 degrees and sunny. Not so fall-y. I mean, what’s a girl gotta do to get a taste of fall around here?

Welp, this is what I do… bake way too much Pumpkin Spice Granola, buy all the Trader Joe’s fall candles, watch football for hours every weekend, and cook every type of squash until I’m convinced it’s actually October. I think I’m getting there…

Anyway, I made some low-sugar Pumpkin Spice Granola to get in the fall mood and had a lot of pumpkin puree leftover which got me thinking… what else can I make that’s pumpkin?? Dangerous question, I know. But I came up with this Perfect Pumpkin Parfait and lemme tell ya - it really is perfect. It's a perfect combo of healthy fat, protein, and fiber-rich carbohydrates to keep you full for hours. It’s a perfect mix of vanilla and pumpkin for a sweet but super healthy treat. And it’s a perfect texture - creamy yogurt and pumpkin puree mixed with crunchy granola. I suggest making a few jars ahead of time (keep the granola separate so it won’t get soggy) for easy grab-and-go breakfasts or healthy snacks throughout the week. It’s also a perfect healthy dessert! Makes: 1 pumpkin parfait

Ingredients

  • 1 cup plain, unsweetened coconut, almond, or cashew-based yogurt (Cocojune might be my favorite, but Kite Hill, Forager, and Culina are also good brands to try!)

  • 1 Tbsp vanilla protein powder (I love Primal Kitchen but Vital Proteins, Ka’Chava, and Naked are other brands I like!)

  • 1/2 cup canned pumpkin (100% pure pumpkin)

  • 1/4 cup Pumpkin Spice Granola

 Instructions

  1. Stir the protein powder into the yogurt until completely mixed.

  2. In a small bowl or jar, alternately layer the yogurt and pumpkin puree.

  3. Crumble granola on top (or if you’re making ahead of time, keep granola separate until ready to eat).
