5-Minute Mediterranean Salad

Quick and easy vegan Mediterranean salad with olives, roasted peppers, cucumbers, and chickpeas.

This salad has been my go-to for a few weeks now, so I wanted to share it with you all! It’s super simple to throw together and is a great source of healthy fats. I love to add a dollop of hummus, drizzle some olive oil and lemon juice, and finish it off with some S&P. This salad also tastes great with my favorite Greek salad dressing from Primal Kitchen!

Makes: 1 salad

Ingredients

  • 2+ cups mixed greens

  • 1/2 cup chickpeas

  • 1/4 cup diced cucumber

  • 1/4 cup roasted red pepper, sliced into strips

  • 8-10 olives

  • 2 Tbsp dressing (olive oil, lemon juice, sea salt and pepper OR Primal Kitchen Greek Vinaigrette)

  • 1 Tbsp hemp seeds

  • 1/4 cup hummus (optional)

Instructions

  1. To a large bowl, add your leafy greens, chickpeas, roasted red pepper, cucumber, and olives.

  2. Drizzle dressing (DIY olive oil/ lemon juice/ salt and pepper or Greek vinaigrette) and sprinkle hemp seeds on top.

  3. If using, add hummus (I usually add hummus with the olive oil dressing, but leave it out if I am using the Greek vinaigrette).
