Roasted Curry Chickpeas

Roasted chickpeas are on my list of Top 10 Healthiest Snacks and for good reason! They are filled with hunger-squashing protein and fiber and can satisfy almost any craving. They are crunchy on the outside, chewy on the inside, and can be flavored to be either sweet or salty depending on your mood.

They are definitely becoming more popular, so you can likely find them packaged at your local grocery store, but they are so easy to make at home! Not to mention, when you make them at home you’re able to avoid any added preservatives and other wonky ingredients you may find in store-bought versions. Even the “healthy” brands often have added sugar or processed oils but the only ingredients you’ll need for the at-home version are chickpeas, olive oil, sea salt, and your desired seasoning!

Makes: 6 servings

Ingredients

  • 2 cans chickpeas

  • 2 Tbsp olive oil

  • 1/2 tsp sea salt

  • Curry powder, to taste

Instructions

  1. Heat oven to 400 degrees.

  2. Rinse and dry the chickpeas. To dry, lay the rinsed chickpeas on a clean kitchen towel on the counter and pat dry. Allow them to finish air drying while the oven preheats.

  3. Toss chickpeas in olive oil and add sea salt. Spread onto a rimmed baking sheet.

  4. Put the chickpeas in the oven on a middle rack. Cook for 25-35 minutes or until golden brown and crispy on the outside. Toss the chickpeas every 10 minutes while in the oven.

  5. When your chickpeas are done, add your curry powder or other spices and toss to coat. They are best enjoyed right out of the oven when they are warm and crispy, but can be stored in an airtight container for a snack later on, too!
